How to check a sample
Five quick checks any buyer can do in a kitchen before comparing suppliers.
1. Look
Colour should be even, light beige to golden. Pieces should be similar in size with little powder at the bottom of the bag.
2. Smell
Dry chunks should smell mild. A strong, rancid or musty smell points to old stock or poor storage.
3. Soak
Soak in hot water for 10 to 15 minutes. Good chunks swell evenly, roughly two to three times their dry size, and don't fall apart.
4. Squeeze and cook
After squeezing out the water they should feel spongy and firm, not mushy, and hold their shape through cooking.
5. Compare the paperwork
Ask every supplier for a recent COA and compare protein and moisture side by side on the same basis.
6. Check the pack
Bags should be clean, well stitched and marked with the batch and date, so a problem can be traced back.
